Buffalo Cauliflower


 Ingredients:
Siete tortilla chips crushed 
1 cup all-purpose flour or gluten free 
3/4 cup water
2 teaspoons garlic powder
1 teaspoon salt
½ teaspoon pepper
1 head cauliflower
¼ cup Franks Red Hot Sauce (the best imo)
2 tablespoons coconut oil or butter

Instructions: 
Preheat the oven to 425˚F Line a baking sheet with parchment paper.

In a large bowl, add the flour, garlic powder, salt, pepper, and water, and stir until well-combined. If the batter is too thick add more water until batter consistency. 

Break the head of cauliflower into florets. Add the cauliflower florets to the batter, making sure each piece is evenly coated. I left the stem uncoated so it was easier to dip. 

Dip the cauliflower into the Siete crushed chips.

Arrange the coated cauliflower on the baking sheet. Bake for 15 minutes.

Meanwhile, in a small bowl, combine the hot sauce, coconut oil or butter. Microwave until melted and stir until evenly combined. 

Brush the sauce mixture on the cauliflower and bake for another 10 minutes. 

You can broil for a few minutes at the end to make them extra crispy!
