Stuffed Meatloaf


  • 1 1/2 pounds turkey or lean ground beef
  • Italian seasoning
  • salt and pepper
  • 1/2 a yellow or red onion
  • 2 cloves chopped garlic
  • 1 egg
  • 1 tsp mustard
  • chopped spinach
  • mozzarella cheese
  • ketchup for topping


  • Preheat oven to 350 degrees. 
  • In a large mixing bowl combine meat, onion, garlic, egg, mustard, and spices
  • Divide meat in half. Shape one half of the meat into the bottom half of the loaf and place on pan with parchment paper or foil. Place mozzarella and spinach on the bottom half.  Shape remaining half of meat as the top half of the loaf, sealing the edges. 
  • Top with more cheese and ketchup if desired.
  • Bake for 30/45 minutes
  • Let rest 5 to 10 minutes before serving.
