Tomato Pie
TOMATO PIE
-1 store bought pie crust (or you can make your own!)
-4-5 ripe beefsteak,heirloom tomatoes (yellow or red) sliced (amount vary depending on how large your pie is)
-1/2 white onion sliced thinly (can also use red or green onion)
-3/4 cup mayonnaise (Duke's preferred... IYKYK)
-1 teaspoon hot sauce
-2 cups grated cheese (I have used all kinds but I like cheddar, mozzarella or parmesan!)
-1/4 cup fresh basil (jullienned)
-salt and pepper
DIRECTIONS:
Preheat oven to 350
Slice tomatoes and lay flat on a paper towel to dry out. This is important and ensures your pie does not turn out soggy!
Mold pie shell into pie dish. Bake 5-7 minutes. Remove and let cool.
Mix together the mayonnaise, 2 cups cheese, hot sauce and salt and pepper to taste.
Start layering in the pie shell: Onions, tomatoes, basil and 1/2 cheese mixture. Repeat layers one more time. You should end with the remaining cheese sauce on top. You can sprinkle a little extra cheese on top. You can also add one tomato and piece of basil on top to make it look pretty.
Bake at 350 degrees about 30/55 minutes or until cheese bubbles and crust is a nice golden brown.
