Easy Turkey Chili
Ingredients
About
1 lb of Ground Turkey Breast or Beef
1
tbl Olive Oil
1
onion chopped
1
can of Beef or chicken Broth
1
can of petite diced tomatoes or crushed (use what you have on hand)!
1
can of Kidney Beans (drained and rinsed)
1
can of Pinto or Cannellini Beans (drained and rinsed)
1/2 cup of frozen corn
1/2 cup of frozen corn
1
can of tomato paste (I usually use half of the can depending how thick I want
it)
1
package of Lawry's Taco Seasoning
1
tsp of dried Oregano (crushed in your hands to bring out oils)
1
tsp of Garlic Powder
1
tsp of Cumin
Salt
and Pepper to taste
Instructions
This
chili is all about layering flavors!
Start by heating a large pot on medium
high heat. Add in your olive oil and start browning your turkey meat—add a
little bit of salt and pepper. When it is brown add in the onions. Once they are translucent add in all the spices above. This is where
you can taste as you go!
The taco seasoning is really what makes this so I
would not skip it!
Next
add your tomatoes, beans, corn and beef broth and bring to a simmer over medium
heat. Some of the liquid will be absorbed. I like to add a little bit of broth
at a time to control the consistency. Add in your tomato paste to thicken the
chili. Again, this can be added a little at a time.
It
will start smelling delicious and you will be amazed at how good it is!
COOK
Cook
for as long as you like to taste. I usually only cook it for 20/30 minutes or
so, but you definitely can longer to absorb more flavor.
Optional Garnishes
Shredded Cheddar or Mexican cheese
Sour Cream or Greek yogurt
Avocado
