Kale and White Bean Soup

I love this nutrient dense heart healthy recipe. It is light but hearty at the same time and doesn't require that many ingredients. You can add in additional protein like chicken or Italian sausage. Some substitutions for kale would be spinach or collard greens. You can also use any kind of beans you have on hand.

2 bunches of kale finely chopped
2 cans of white beans (drained)
1 can of diced tomatoes (in juice)
Chicken broth
chopped garlic
chopped onion
salt and pepper, Italian seasonings to taste

Parmesan or mozzarella cheese
saltine crackers

Add olive oil in hot pan and cook garlic and onion until translucent
Add in kale and cook until wilted
Add in canned beans, tomatoes, and broth
You can adjust it all to your preference. There is really no wrong way to make this!
