My daughter loves cucumbers so I made these for her 2nd Birthday and they were such a hit with the kids and adults alike! I didn’t want to throw out a bowl of lonely cucumbers so these were a fancy twist on (one) of her favorite fruits. They are bursting with flavor thanks to the combination of Italian seasoning, pumpernickel bread, and cream cheese. Hopefully your toddler loves them too! I find letting her spread the cream cheese, cut the bread with a cookie cutter, and/or top with the sliced cucumber makes her even more interested in the final product. These sandwiches are perfect for anytime—especially a midday snack. No party required!
Mini Cucumber Sandwiches
Ingredients
  • 1 (8 ounce) package whipped cream cheese
  • 1 package dry Italian-style salad dressing mix
  • 1 loaf of pumpernickel bread (trust me on this) or any type of bread your kiddo likes
  • 1 cucumber, thinly sliced
Directions:
Cut the bread with a small round cookie cutter (a little larger than your cucumber slices). If you don’t have one on hand, you can cut into small squares. In a small bowl, mix whipped cream cheese and dry Italian-style dressing mix. I like to let this sit overnight to meld the flavors. Spread equal portions of the mixture on slices of the pumpernickel bread (or whatever you're using). Top each with a slice of cucumber.
